This recipe for guava glazed ribs comes from a long list of bookmarks, specifically from my cookbook Cuba. I recently made this for my annual summer soiree with my family and there wasn’t any of the three racks of ribs left afterwards. This is super easy to make and yields such an incredible flavor. I made my popular guava margaritas to go along with the ribs and it was perfection! Happy summer grilling!

GUAVA BBQ SAUCE
Ingredients
- 1½ cups guava paste
- ½ cup apple cider vinegar
- ½ cup water
- ½ cup ketchup
- 1 teaspoon salt
- 2 teaspoons molasses
- 2 cloves garlic, minced
- 3 tablespoons dark brown sugar
- 2 teaspoons hot sauce, preferably habanero
- Freshly ground pepper
Prepare
- Bring all of the ingredients except the pepper to a simmer in a small saucepan over medium-low heat. Cook for about 15 minutes, stirring occasionally. Season to taste with salt and pepper. Makes about 3 cups.
Ribs
Ingredients
- 3 (3- to 4-pound) racks baby back pork ribs
- 12 cloves garlic, peeled
- 2 teaspoons salt
- 1¼ cups bottled sour orange juice, or 1 cup freshly squeezed orange juice mixed with ¼ cup freshly
- squeezed lime juice
- Guava BBQ Sauce (recipe above)
Prepare
- Cut the ribs into 5- to 7-inch sections and place them in a nonreactive baking dish or bowl.
- Blend the garlic, salt, and juice in a blender or food processor until smooth. Pour the marinade over the ribs, cover, and refrigerate for at least 2 hours, turning the ribs occasionally.
- Preheat the oven to 275°F. Remove the ribs from the marinade, reserving the marinade, and place them on a rimmed baking sheet lined with aluminum foil. Bake the ribs, uncovered, for about 2 hours, until the fat begins to render and the ribs are softened.
- Remove the baking sheet from the oven and pour the reserved marinade over the ribs. Cover the baking sheet tightly with foil and return it to the oven. Bake for another 1½ to 2 hours, until the ribs are fully tender. You should be able to easily pull the meat away from the bone. Uncover the ribs and set aside to cool.
- Preheat your grill to high heat. Brush the ribs with Guava BBQ Sauce (saving some for guests to slather on their portions) and cook for 7 to 8 minutes on each side, until the sauce is sticky and the ribs are slightly charred. Serve with the extra sauce.
