In my continuation of fruity summer drinks we have a new spin on mojitos with these pink dragon fruit mojitos. So simple, fruity, and refreshing…perfect for ending a hot summer day. This drink not only tastes amazing but looks so fun and untraditional, which I have been trying to go for with my cocktails lately too. I hope you enjoy these soon!

Pink Dragon Fruit Mojitos
Ingredients
- Pink dragon fruit, frozen cubes
- mint leaves
- 1/2 oz simple syrup
- 2 oz. Bacardi rum
- 2 oz. freshly squeezed lime juice
- Prosecco for topping off
- mint, for garnish
- lime wedges, for garnish
Prepare
- In a shaker muddle the frozen pink dragon fruit chunks, mint, and bacardi.
- Add in the simple syrup and lime juice.
- Shake the cocktail and strain into a glass with ice.
- Top the drink off with Prosecco and add mint and lime for garnish.
