This Filetto al Pepe Verde was a recent find on TikTok via Chef Max Mariola’s account. There’s definitely more to Italian food than pasta and pasta fagioli. This steak and it’s simple accompanying sauce is something to wow your loved ones with. Feel free to pair it with some baked smashed potatoes and asparagus as I’ve done for this meal and wash it down with your favorite red wine.

Filetto Al Pepe Verde
Ingredients
- 6 – 8 Filet Mignons
- flour, enough for dredging
- 3.5 oz. capers
- 4 tbsp. butter
- 1.5 cup heavy cream
- 3/4 cup Cognac
- 2 tbsp Dijon mustard
- salt and pepper, to taste
Prepare
- First, heat 2 tbsp of butter in a cast iron skillet.
- Pound about five or more capers into one side of each filet mignon.
- Dredge the top and bottom of the filet mignon’s in the flour.
- Heat each side of the filet mignons in the skillet, five minutes per side to ensure a medium finish. Scoop on butter from pan while cooking. Do this in two batches.
- Glaze the pan with cognac and then add Dijon, heavy cream, and salt and pepper to taste. Add more capers and return steaks to the pan and bathe the steaks in the sauce for five minutes. Serve with more additional sauce. Enjoy!
