It’s not always charcuterie for snack after school at my house. This herbed goat cheese appetizer has been on heavy repeat for the last few months at my house. I make it a day ahead and then it’s ready for my hungry boys and their friends when they come over. Feel free to enjoy with the crackers of your choice or crusty baguette / crostini slices.

Herbed Goat Cheese Appetizer
Ingredients
- 1 10 oz. log goat cheese
- 1/4 tsp freshly cracked black pepper
- 1/2 tsp freshly cracked sea salt
- 1 lemon, zested
- 3 cloves garlic, finely chopped
- 2 tsp fresh thyme leaves
- 1/2 tbsp fresh rosemary leaves, finely chopped
- 3 tablespoons roasted red peppers, finely chopped
- 1/4 cup chopped parsley
- 1 cups olive oil
- Crackers or crostini
Prepare
- First, slice the goat cheese into 1/2″ thick rounds, then cut into quarters. Freeze for about 10 minutes so it doesn’t get soggy and fall apart in the olive oil.
- Next, add the goat cheese to a tall jar and add the black pepper, lemon zest, chopped garlic, thyme, chopped rosemary, roasted red peppers, and chopped parsley. Add enough olive oil to completely cover the cheese. Cover the jar tightly with the lid and shake until well combined.
- Refrigerate for at least 30 minutes and up to 1 week.
- Serve with crackers or crostini for an appetizer/ snack.
