I first tried quail egg and bacon skewers, long before I lived in New York City at my favorite place, Yakitori Taisho. Over the summers I lived in NYC and the many visits ever since, I have always made it a point to go back. their many skewers are all divine and I encourage you to go and try them all. This recipe comes from some recent tinkering with the quail eggs. They are an excellent source of protein, B12, and iron. I hope you enjoy this as an appetizer or prepare ahead for snacks for your work days.
