I have had the inspo for this citrus salad with honey goat cheese saved for some time now from Zuni cafe. I’ve yet to make it to California and specifically Zuni Cafe, but you better believe when I get there it will be the first place I am hitting to dine! This salad is definitely not your traditional leafy or pasta summer salad. It is a light and refreshing salad that uses seasonal citrus and is sure to impress your family and guests. Citrus Salad with Honey Goat Cheese
Ingredients
- 1 large navel orange, sliced thin and outer pith removed
- 1 large tangerine, sliced thin and outer pith removed
- 1 large watermelon radish, sliced into matchsticks
- 4 oz honey goat cheese
- 1/4 cup parsley, leaves in chunks
- 1/4 cup balsamic glaze
- 1/4 cup extra virgin olive oil
- 1 medium shallot, minced
- maldon salt
- freshly cracked black pepper
Prepare
- First, slice the orange and the tangerine and place on a plate in a circle.
- Slice the watermelon radish into thin round slices then further into thin matchsticks and spread all over the center of the citrus slices on the dish.
- Next take small chunks of the honey goat cheese and spread them around the center of the dish along with the parsley and loosely toss.
- In a small mixing bowl, mix the balsamic glaze, extra virgin olive oil, and minced shallot to make the vinaigrette and pour all over the salad.
- Sprinkle maldon salt and freshly cracked black pepper all over the salad, serve, and enjoy!
