
Apricot and Dijon Chicken Skewers
Ingredients
- 3 lbs chicken breast and/or thighs, this is really about what you have on hand/preference, cut into 1 inch chunks
- 2 Tbsp extra virgin olive oil
- 1 jar Bon Maman Apricot Preserves
- 2 Tbsp Maille Dijon Mustard
- 2 Tbsp Maille seedy Dijon
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 tsp black garlic powder
- 6 cloves garlic, mashed or minced
- cucumber, sliced then halved
- cooked rice for serving
- extra virgin olive oil spray for grill
Prepare
- First, spray your grill grates with extra virgin olive oil.
- Next, pre-chop anything needed.
- In a bowl mix together the chicken, olive oil, apricot preserves, Dijon mustard, Dijon seedy mustard, garlic, onion, and black onion powders, and garlic and mix well. Let marinate for 30 minutes to overnight.
- Skew the chicken onto metal skewers, tightly packed.
- Bring a grill to medium heat and grill using metal grill tongs to turn the skewers every 3-4 minutes until you have char on all sides of the chicken.
- Finally, plate the skewers and allow to cool before pulling the chicken off and serving with the rice and cucumber. Salt and pepper to taste and enjoy!
