I’ve recently caught on to this viral spicy cucumber salad deal, and I am here to say, I’m not mad. I usually don’t follow trends, not even n the food world, but this one seemed too good to pass. It’s healthy, has kick, and sounded like the perfect after school and/or summer snack. We’ve been putting this one on heavy repeat. We hope you enjoy it as much as we do!

Spicy Cucumber Salad
Ingredients
- 4 cucumbers
- 3/4 tsp salt
- 1 shallot, minced
- 1 cup green onion , green part only finely sliced
- 2 tbsp+ chilli crisp (crispy chilli oil)
- 2 tsp sesame seeds of choice (I use Black Garlic Finishing Salt)
Dressing: - 1 1/2 tbsp rice vinegar (sub any clear vinegar)
- 2 tsp soy sauce , all-purpose or light (Note 4)
- 2 tsp sesame oil, toasted
Prepare
- First, cut cucumber into 1/2 thick slices.
- Next, place cucumber slices in a bowl and toss with salt. Set aside for 30 minutes to draw out water.
- In the meantime, bring a small pan to medium-high heat and toast your sesame oil for about 5 minutes. Allow to cool off.
- Drain/strain and discard salty water, leave cucumbers in same bowl.
- Next, in a bowl whisk together the rice vinegar, soy sauce, sesame oil for the dressing.
- Now toss the green onion, shallots, sesame seeds, dressing and chilli crisp with the cucumbers. Enjoy!
