Ramen night is a common occurance in my house as my boys and husband absolutely love ramen. This Szechuan Ramen is one we came up with by mixing around some things we had done with previous recipes but also incorporating bone broth and Szechuan seasoning from William-Sonoma. Szechuan is known to cause a numbing/tingling sensation on the lips and tongue, just to give you a fair warning. It is absolutely delicious though and you won’t be able to get enough. It does have salt as well so there’s no need to pre-salt or additionally salt this ramen so you don’t go overboard. This is such a comforting dish and we hope you enjoy it as much as our family does.

Szechuan Ramen
Ingredients
- 1 Tbsp sesame oil
- 1 onion, diced
- 6 cloves garlic, minced
- 1 Tbps ginger, grated
- 1 lb boneless pork ribs, cubed
- 12 cups bone broth
- 1 Tbsp soy sauce
- 1 8.4 oz. package organic ramen noodles, Ocean’s Halo
- 1 tsp sesame oil
- 6 oz button mushrooms, sliced
- 1 cup bok choy, roughly chopped
- 1 tube Narutomaki, sliced
- 2 Tbsp green onions, sliced
- 1/2 cup carrot matchsticks
- Szechuan seasoning
Prepare
- First, in an InstantPot, set the function to saute and add the sesame oil and onions and saute for seven minutes. Add the garlic and saute another minute followed by the ginger and saute another minute as well.
- Add the pork and stir until it begins to sear for about 10 minutes.
- Next, press cancel to end the saute function, add the 12 cups of bone broth to the InstantPot. Place the lid and seal it and set the InstantPot function to soup for 35 minutes.
- In the meantime, in a saute pan on medium-high heat, sear the mushroom slices with a tsp of sesame oil until just browned and set aside.
- Manually release the pressure from the InstantPot when complete and add all 4 of the ramen packages in the box. Occasionally stir the ramen until it’s completely soft. Ladle the ramen and broth into bowls.
- Finally, top each of the bowls with the mushrooms, bok choy, Narutomaki, green onions, carrots, and plenty of Szechuan seasoning. Enjoy!
