I am always inventing some kind of meal based of previous ones to keep thing interesting in the kitchen and on my family’s palate. This is one of those Tuesday nights that are insane enough, let me make something healthy, quick, and delicious kind of meals. These mediterranean chicken kabobs were easy to whip up and literally took everything I had in my kitchen to make at the time. You can feel free to change the seasoning to your taste or simply use what you have on hand. I promise you that no matter how you season this, the secret is in the char. The little bits of char your kabobs pick up seal the flavor and ass crunchy bits of texture. My sons and husband love when I make kabobs and we all agreed that these are the best I have made yet!

Mediterranean Chicken Kabobs
Ingredients
- 2.5 lbs chicken thighs, cubed
- 2 tbsp Worcestershire sauce
- 2 tbsp Spicy Dijon mustard
- 1/4 cup olive oil
- 1/4 cup reduced balsamic vinegar
- 1/4 cup light brown sugar
- 6 garlic cloves, mashed
- 1.5 tsp basil, dried
- 1.5 tsp oregano, dried
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 large zucchini. coarsely sliced
- 1 large red bell pepper, cut into 1 inch squares
- 1 large yellow bell pepper, cut into 1 inch squares
- 1 large red onion, cut into 1 inch chunks
- olive oil, for spraying grill (Flairsol Olivia Oil Spray Bottle)
Prepare
- First, spray your grill with olive oil spray then ignite the heat if it is a gas grill / light up your charcoal if using that. Turn up / work up to a medium-high heat.
- Cube the chicken thighs and place in a large mixing bowl along with the Worcestershire sauce, Dijon mustard, olive oil, reduced balsamic vinegar, garlic, dried basil and oregano, and garlic and onion powders. Mix until everything is well coated and keep in fridge for an hour or more to marinate.
- Cut the zucchini, red and yellow bell peppers, and red onion. Using 8 stainless steel skewers, skew an alternating combinations of the veggies with the chicken in between each one. Spray each skewer with additional olive oil so the veggies also end up getting a nice char on the grill.
- Grill each side of the skewers for about 3 – 4 minutes, making sure each side gets just enough char and that the chicken cooks all the way through.
- Plate and serve the skewers. These make for a quick and healthy meal prep for the week as well. Enjoy!
