Our clean eating at home is still going strong since January and it feels so much better to be eating like this all of the time. I read a quote somewhere recently that the more you eat a certain kind of food/way the more you will crave it and this is so true. This Vegetables and Mahi Mahi in Papillote is just what you need to incorporate into you clean eating repertoire.

Vegetables and Mahi Mahi in Papillote
Ingredients
- 1 pound – 5 filets Mahi Mahi
- 1/2 pint grape tomatoes, quartered
- 2 zucchinis, stems removed, sliced then quartered
- 10 oz. corn kernels
- 1 medium red onion, diced
- 2 limes, sliced
- 2 limes, for juicing
- 1/4 cup Pinot Grigio
- Fresh Market Signature Spice Rub & Marinade
- 2 tbsp olive oil
Prepare
- Preheat the oven to 400 degrees F. Place mahi mahi filets in a large mixing bowl and sprinkle generously with dry rub. Mix until mahi mahi is well coated with the dry rub.
- Cut the grape tomatoes, zucchini, red onion, and 2 limes.
- Prepare 6 sheets of parchment paper into packets by folding into four sides (rectangle). Place each mahi mahi filet into each packet. Top with the tomatoes, zucchini, corn kernels, red onion, 1 lime slice on top of each, lime juice into each packet along with the Pinot Grigio divided evenly into all six packets.
- Seal each packet and place on a baking sheet. Bake the packets for 35 minutes.
- Remove packets from oven and allow to cool. Serve and enjoy!
