If you’ve been here for a while you will know I featured no-bake protein balls similar to these back in 2017 and it was featured in Palm Beach Illustrated a few months after. These are taken a notch up with the coconut shreds coating. The crunch of and flavor of these coconut peanut butter protein balls will leave you craving more! These smaller coconut shreds work better than coconut flakes, in my opinion. They offer a bit more crunch to the texture and don’t get stuck in your teeth, like coconut flakes do. Plus I love the flavor of these coconut shreds from the brand Healthy Truth. These are perfect for snacking on throughout the week instead of reaching for something sugary and not healthy.

Coconut Peanut Butter Protein Balls
Ingredients
- 1 cup peanut butter
- 1/2 cup agave syrup
- 1 tbsp chia seeds
- 2 Tbsp unsweetened cocoa powder
- 1 tsp. vanilla bean paste
- 1 scoop (2 tbsp) vegan chocolate protein powder
- 2 cup rolled oats
- 1/2 cup salted, unshelled sunflower seeds
- 1/2 cup unsweetened flaked coconut (I buy Healthy Truth Coconut Shreds from Amici Market in Palm Beach)
Prepare
- First, stir together the peanut butter, agave, chia seeds, cocoa powder, vanilla bean paste, and the chocolate protein powder in a large mixing bowl by hand until well combined.
- Stir in the oats and sunflower seeds and continue mixing by hand until all is well incorporated.
- Form small balls, smaller than the size of a golfball, roll in a plate with the coconut shreds until well coated, and then place them on a parchment lined baking sheet.
- Once done, place the baking sheet into the refrigerator. Make ahead and enjoy for the whole week to come as a snack to stave off cravings. Enjoy!
