In my continuation of my much abandoned “new” cookbook, Cook Real Hawai’i, I am featuring Spam musubi in this post. I have made this a few times for my family and we’ve all concluded that we could eat this for days on end if it came down to it for whatever reason. It’s the perfect blend of rice, egg, and salty Spam. I think what really seals the deal is the Spam glaze and how it caramelizes the entire slice of Spam. My boys and husband devour this every time I make it and are always happy I make as many as I do. Good luck having only one!

Spam Musubi
Ingredients
- 3 tbsp soy sauce
- 4 tbsp Mirin
- 1 tbsp sake
- 2 tsp brown sugar
- 3 cups Japanese rice
- 2 tsp sugar
- 2 tsp Mirin
- 2 cans 12 oz. Spam – cut into 8 slices each
- 4 Nori sheets, cut along perforations into long strips
- 6 eggs
- Furikake for garnish
Prepare
- Place 3 cups rice and 3 cups water in an Instantpot or rice cooker and set to rice setting / cook.
- Cut Spam and set to side in a large bowl. Save the cans of Spam for later.
- Whisk soy sauce, Mirin, sake, and brown sugar together in a small mixing bowl and pour all over Spam in large bowl.
- Heat large nonstick pan to medium and cook Spam slices 4 minutes per side so that the sauce caramelizes onto Spam slices. Plate and set aside.
- Once rice is done, mix in sugar and Mirin. Line a small baking sheet with parchment paper and press rice down flat onto sheet. Place in the refrigerator for one hour.
- In the meantime, whisk 6 eggs in a bowl. Heat a pan to medium heat and cook scrambled egg. Flip the egg over to ensure both sides are cooked evenly. Using the Spam can, cut out the shape of the opening of the Spam can and set precut egg aside.
- Take the rice tray out. Using a different Spam can use it to cut out the rice into the same shape and set aside.
- Assemble the musubi by placing a long strip of Nori on a plate. Place a cut rice piece on top, followed by the egg, then the Spam. Wet the edge of the Nori strip and seal it shut on top of the musubi stack.
- Sprinkle the musubi with furikake and enjoy!
