I am featuring this pasta salad lunch meal prep. This is another delicious and easy lunch to prep ahead that will take you under 45 minutes to make and assemble for the week. This is similar to a pasta salad I made a while back but just changed up a few ingredients to spice it up some. Meal prep shouldn’t feel daunting or boring and the foods you eat should be healthy and leave you wanting more healthy food just like it. Enjoy!

Pasta Salad Lunch MEAL Prep
Ingredients
- 1 lb fusilli pasta
- 5 tbsp olive oil
- 4 oz. salami, thinly sliced
- 1 red onion, finely sliced
- 3 cloves garlic
- 2.5 cups grape tomatoes
- 3 tsp capers
- 2 tbsp red wine vinegar
- 2 tbsp balsamic vinegar
- 1 lemon, juiced
- 3 cups baby arugula
- 8 oz mozzarella balls
- freshly cracked sea salt
- freshly cracked black pepper
Prepare
1. First, bring a large pot of water to a boil and cook the pasta for about 7 minutes, or until al dente.
2. Next, in a large skillet, cook the thinly sliced salami for about a minute, or until they start to crisp up and set to the side.
3. In a large bowl, toss the onion, garlic, cherry tomatoes, and capers together.
4. In a small bowl, whisk the red wine vinegar, balsamic vinegar, lemon juice, and olive oil.
5. Finally, once pasta has cooled, toss into a large bowl with veggies and pour the vinaigrette on top. Add salt and pepper to taste and toss until everything is well incorporated.
