In an effort to keep things clean, simple, and quick I have been making up my own salads as I go this year so far. The new year starts off with resetting, goal setting, purging, and things of the sort for a lot of people. It is definitely a great time to begin anew and I support that mentality 100%. In an effort to eat cleaner and control my portions I recently came across these 10 oz. Seal Tight Glass Bowls from W&P while shopping at the Container Store. The very first recipe I decided to come up with for lunch prep for these on my first week back to school was these Mediterranean Salad lunch bowls. It was easy to make with some prep ahead to the prep itself and it is so delicious that you’ll definitely be scraping your bowl at lunch time.
I have recycled some mini Bonne Maman bottles that I got at our hotel during our DC trip back in September of 2023 for the olive oil and balsamic vinaigrette dressing. It’s easy to transport, also glass, has a tight seal, and you save your salad from getting soggy by pouring the dressing over when you’re ready to eat.

Mediterranean Salad Lunch Bowls
Ingredients
- 5 oz. mixed spring greens
- 1 large cucumber
- 2 tsp black garlic salt
- 1 pint grape tomatoes
- 16 garlic cloves in oil
- 4 oz feta cheese
- 2 oz. pickled red onions
- olive oil
- balsamic vinegar
- 4 chicken cutlets
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 1 tsp lemon pepper seasoning
- 1 tsp paprika
- 1 tbsp honey
- 1 tsp oregano
Prepare
- Divide the 5 oz. of mixed greens between the four bowls. Place three slices of cucumber in each container.
- Sprinkle the black garlic salt on top of each salad, place four grape tomatoes in each container, followed by four garlic in oil cloves, crumbled feta cheese, and pickled red onions.
- Place the chicken cutlets in a bowl and season with the garlic and onion powders, olive oil, lemon pepper seasoning, paprika, honey, and salt and pepper. Mix to full coat the cutlets.
- Preheat oven to 400 F. Line a baking sheet with parchment paper and bake cutlets for 20 mins.
- Slice each cutlet and place each one on top of the prepped salad. Enjoy!
