Gin has been something I’ve added into my cocktail-making repertoire in the last year and a half or so since our last trip to New York City. I’ve always been skeptical on colored and flavored liquors due to their usual high sugar content. I stand corrected on my skepticism with this 1908 Empress Gin, it’s smooth and the color is fun in cocktails. I came across this Spring Fever Cocktail on the little tag attached the gin and I am very satisfied with how refreshing it came out. This Spring Fever Cocktail is great for any season. Enjoy!

Ingredients
- 2 oz. 1908 Empress Gin
- 1 oz. freshly squeezed lemon juice
- 1/2 oz. honey simple syrup
- 2 oz. grapefruit soda
- lemon wheel, for garnish
Prepare
- Shake 1 oz. gin, lemon juice, and honey simple syrup in a cocktail shaker with ice.
- Strain into a cocktail glass on ice and add 2 oz. of grapefruit soda and add a layer of remaining gin on top.
- Garnish with the lemon wheel, serve, and enjoy!
