
Ingredients
- 375 ml bottle of French Sauternes wine
- 2 tbsp soy sauce
- 1/4 cup sugar
- 1.5 pound Foie Gras ( I use Hudson Valley Foie Gras)
- 32 oz. cooked sushi rice
- 3-4 packages Nori (smaller snack sizes are easier)
- 2 red pears (Bartlett will work just fine as well), thinly sliced
- Pickled Ginger (optional)
Directions
- First, reduce an entire 375 ml bottle of any French Sauternes wine, with a little soy sauce, and sugar for the glaze on this sushi. Whisk for about five minutes. Allow to cool and set aside.
- Next, use a small sheet of nori, a handful of sushi rice, and a thin slice of pear.
- On a large pan, sear the foie and place on the pear and generously top with the ice cider glaze.
- Finally, add pickled ginger if desired, fold up the two sides of nori like a bun and scarf it like a hot dog
