We have been on a sushi everything kick in my house. We have tried sushi stacks like this at restaurants for a time and decided to get creative with this sushi shrimp stack recipe. My boys enjoyed this and your family is sure to enjoy it as well.

Sushi Shrimp Stack
Ingredients
- 8 ounces cooked shrimp, finely chopped
- 2 tbsp sesame oil
- 2 tablespoons mayonnaise
- 2 teaspoons sriracha
- 1 ½ cups cooked short grain rice
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 small avocado, mashed
- Salt and pepper, to taste
- 2 Persian cucumbers, diced
- Olive oil spray
- Sesame seeds, for serving
Prepare
- Cook the rice in a rice cooker or pressure cooker.
- Heat sesame oil over medium heat in a cast iron skillet and toss the shrimp for five minutes.
- Off the heat and allow the shrimp to cool.
- Place shrimp in a mixing bowl and toss with mayonnaise, sriracha, salt, and pepper.
- Cool rice and mix in soy sauce and rice vinegar.
- Cut up cucumber and avocado into small cubes.
- In a separate mixing bowl toss the cucumber and avocado together.
- Next, build the sushi shrimp stack by using a large cookie cutter.
- Spray the inside of the cookie cutter with olive oil spray, and place on the plate you will be serving this one.
- Add the rice at the bottom first, followed by the cucumber/avocado mix, and top it off with the shrimp mix.
- Unmold the stack and top with sesame seed/nori mix, salt, and pepper. Enjoy!
