This is one of our family favorites as far as a quick chicken dinner. There are not many ingredients involved and I always have a ton of rosemary in my garden, which is also a family favorite on just about anything. This one is short, easy, and sweet and easy to pair with a nice salad and/or potato wedges. Enjoy!
Grilled Rosemary Dijon Chicken
Ingredients
- 6 chicken cutlets
- 2 lemons, halved and juiced
- 2 Tbsp seedy Dijon, I use Maille
- 2 rosemary sprigs, leaves removed and finely chopped
- 2 thyme sprigs, leaves removed
- 2 Tbsp extra virgin olive oil
- 5 cloves of garlic, minced
- pinch of Maldon salt
- freshly cracked black pepper
Prepare
- First, place the chicken cutlets in a large mixing bowl.
- Juice the lemons over the chicken and add the Dijon, finely chopped rosemary, thyme, extra virgin olive oil, minced garlic, salt, and pepper. Mix well into all of the ingredients are well incorporated.
- Next, grease and heat a grill to medium heat. Grill the chicken cutlets for three minutes per side, plate, and allow to cool.
- Serve and enjoy!
