I am always tinkering with salads so that we aren’t always eating the same thing over and over in my house. This citrus and herb salad is my most recent and successful attempt at that. Is is easy to make whether for yourself, for your family, or for a gathering. I say it’s the perfect winter salad to help you get some Vitamin C in there to ward of the case of the sickies. Enjoy!
Citrus and Herb Salad
Ingredients
- 1 bunch butter lettuce, coarsely chopped
- 2 Mandarin oranges, peeled and separated
- 1/4 red onion, halved and thinly julienned using a mandolin
- 1/2 cucumber, thick sliced then halved
- 1 radish, thin sliced with mandolin, then chopped into matchsticks
- 3 sprigs dill, coarsely chopped
- 2 Tbsp parsley, coarsely chopped
- 1.5 Tbsp seedy Dijon, I use Maille
- 1 Tbsp extra virgin olive oil
- 1 Tbsp white Balsamic vinegar
- 1/2 tsp freshly cracked sea salt
- 1/4 tsp freshly cracked black pepper
Prepare
- First pre-rinse and chop all of your ingredients.
- Then place all of the ingredients in a large bowl and loosely mix with your hands until everything is thoroughly combined. Enjoy!
