I recently had a get together for a girls’ night with my girlfriends I have known since the sixth grade, a summer soiree if you call it that. I made a most delicious grilled spatchcocked Peri Peri Chicken and my friend Leisy brought this incredible watermelon feta salad. I asked her for the recipe and here it is, recreated and I am in love with how fresh it is. Full disclosure here…how addicting it is too! This watermelon salad is so easy to make and is sure to make the perfect summer entertaining show-stopper salad! Enjoy!
Watermelon Feta Salad
Ingredients
- 6 watermelon slices, cut down into smaller triangular slices
- 10 cherry tomatoes, quartered
- 1 Tbsp basil, coarsely chopped
- 1/2 Tbsp mint, coarsely chopped
- 1/2 red onion, thinly julienned
- 3 Tbsp feta, crumbled
- 2 Tbsp pistachios, crushed
- 1 Tbsp extra virgin olive oil
- 2 Tbsp Balsamic glaze
- 1 lime, juiced
- 1/2 tsp sea salt
- 1/8 tsp freshly cracked black pepper
Prepare
- First, pre-chop all ingredients needing chopping.
- Next, in a bowl mix the watermelon, cherry tomatoes, basil, mint, red onion, feta, and pistachios.
- Then in a bowl or salad dressing bottle, mix the extra virgin olive oil, Balsamic glaze, and lime juice and pour all over the salad.
- Finally, sprinkle / top with the salt and pepper and enjoy!
