I’ve got a long of list of breakfast-like baked goods that I want to get through and I finally feel like I am stepping into a season where I have more time to do so. These everything pastelito bites are a bit of a combination of a few different recipes. I could’ve stopped at pastelito bites but wanted to add some more pizzaz than just the traditional ingredients and way to make them. And with Trader Joe’s Everything Seasoning being as delicious as it is and only $1.99 I knew I had to use just that. These are perfect for a slow morning or as an appetizer for your next party. Everything Pastelito Bites
Ingredients
- 1 box puff pastry sheet
- 1 egg yolk
- everything bagel seasoning
- 8 oz. cream cheese
- juice of 1 lemon
- 1 tsp parsley, finely chopped
- 4 oz. guava jelly
- salt
Prepare
- Preheat oven to 400 degrees F. Thaw out pastry dough. Line a baking sheet with parchment paper.
- Open the pastry sheet and lay it flat on parchment paper. Using a 2 inch cutter cut out circles as tight next to each other as possible to use up all of the dough and make as many bites as possible.
- Place the discs on the parchment lined baking sheet. Imprint each one with a 1 inch cutter in the center, taking care to not pierce all the way through.
- Using a pasty brush, brush egg yolk only along the outer edge/rim of each disc.
- Sprinkle the dough discs with everything seasoning and bake for 12-15 minutes.
- In the meantime, using a stand mixer, mix the cream cheese, lemon juice, and parsley together using the paddle attachment until smooth. Place into a piping bag with a wide circular tip.
- Remove the bites from the oven. Smash each one down in the center using a rounded teaspoon measuring spoon.
- Pipe the cream cheese mix into each bite and top with a 1/2 tsp dollop of guava jelly. Sprinkle with sea salt and serve immediately.
