In an effort to keep things interesting and not bore of my meal prep this year, I am opting for totally different lunch preps every week for the next eight weeks. So far for the month of January it has been successful as my husband and I are satiated after each lunch and crave more of these healthy and delicious lunches. These protein lunch bowls are so delicious and offer a good amount of protein, carbs, and are packed with flavor. Protein Lunch Bowls
Ingredients
- 1 cup cooked wild rice
- 2 cups fresh arugula
- 1 lemon
- 1.5 cup portobello mushrooms, sliced
- 4 tbsp balsamic vinegar
- 4 tbsp olive oil
- salt
- pepper
- 8 eggs, boiled 7 minutes for jammy eggs
- 1 haas avocado, cubed
- 8 oz. goat cheese
- 2 tbsp Dijon mustard
- 4 tbsp grated Pecorino Romano
- 1 tbsp honey
- 3 tbsp olive oil
- 2 tbsp water
- salt
- pepper
Prepare
- First, cook the one cup rice with 1 tbsp olive oil in rice cooker or pot over medium high heat for 15 minutes, set aside and allow to cool 15 mins.
- In a medium-sized dutch oven or pot, bring water to a boil. Add eggs and boil for seven minutes. Drain water and add ice and water. Allow to cool and peel the eggs and halve them.
- In a large pan, working in two batches, heat 2 tbsp olive oil and 2 tbsp balsamic at a time, over medium-high heat and cook portobello mushroom slices for 3 minutes per side, sprinkle salt and pepper to taste, and set aside.
- Assemble 8 bowls by adding wild rice, arugula, portobello mushroom slices, goat cheese, and squeeze lemon juice all over each. Top with hard boiled egg and avocado
- Whisk the dressing by combining Dijon, grated, Pecorino Romano, honey, olive oil, water, salt, and pepper and add to smaller glass containers to add onto bowl when serving.
- Pack a bowl each day for lunch and enjoy! I’ve made 8 since that is enough for my husband and I for 4 days worth of lunch.
