Boosted Jook

As a kid we all experience a go to meal when we aren’t feeling out best, possibly being overrun by a cold or something of the sort. Boosted Jook has become our family go-to the moment sniffles come into play. It’s a brothy rice soup that with very few ingredients and toppings is sure to give whatever ailment trying to take over your immune system and eviction notice. They say food is medicine, but this dish for sure will left your body out of a funk.

Boosted Jook

Ingredients

1 pound raw beef bones with marrow

1 nub peeled ginger, finely grated

1/2 teaspoon kosher salt

¼ teaspoon black pepper

2 cups uncooked white rice, long or short grain (basmati or jasmine will work fine, as well)

8 cups water, 2 cups for after, plus more as needed

Green onions, thinly sliced

Parsley, chopped

Chili crisp

Prepare
  1. Set your InstantPot to the sauté function and pour in sesame oil. Place in the beef bones with bone marrow and stir until sizzling. (My InstantPot is the 8qt size).
  2. Next, add in the onion and garlic and sauté until soft.
  3. Add the ginger and stir until just fragrant.
  4. Stir in the powdered bouillon and stir until combined.
  5. Add 2 cups of rice and 8 cups of water.
  6. Press cancel, place the lid on your InstantPot and set it to the meat/stew function for 1 hour.
  7. When ready, release the pressure. If you’d like at this point you could add 4 cups or more of water, depending on how brothy you want the jook to be. The rice will look fallen apart and almost have the same consistency as grits/ oatmeal.
  8. Stir in salt and pepper to taste.
  9. Serve the jook in bowls and top with green onions, parsley, and chili crisp as desired and enjoy!
